Green Cabbage a round, compact vegetable, is hardy and grows year-round in the Santa Maria Valley. Cabbage can be cooked in soups, eaten raw in tacos (our favorite), shredded in coleslaw, pickled into sauerkraut, or its whole leaves used as a wrap, just to name a few. Cabbage is high in vitamin C and low in calories.
